(July 16, 2015) Following a short stint of soft openings, new West Ocean City eatery Fat Fish officially opened to the public on Tuesday, July 7.
The “all organic” restaurant offers starters, including wings, as well as salads, sandwiches, burgers and “beach burritos.”
“We wanted to do something where it’s not really touristy, where we do everything mostly for the locals,” Chef Joe Boncore said. “We’re trying to be organic and environmentally friendly, and these are all local guys who are doing it.”
Boncore previously worked at Caesar’s Palace in Las Vegas and Café Milano in Washington, D.C.
“We get our produce from Pittsville, our fish from down the street, our chicken and our beef and everything is GMO free,” he said. “We’re not using any plastics. We’re trying to make sure everything we use is biodegradable.”
During the lead up to opening, Boncore said word of mouth has been exceptional.
“Everyone has been coming here and saying, ‘Why aren’t you open yet?’ We’re trying to get there!” he said.
Fat Fish features a small dining area and a delivery service. Getting a reservation, however, could prove to be tricky, as opening and closing times may vary.
“Our motto is our hours vary to swell conditions, so depending on the [ocean] swells, we might close and all go surfing, but we’ll be back after we’ve gone surfing,” Boncore said.
Surfing, clearly, is a way of life for the staff.
“Everyone here has worked in the community and our partnership are all local guys that lived here, surfing and growing up here,” Boncore said. “They were sick of everything touristy, so we decided to do something that’s kind of like a local’s spot. It’s the friendliest place that you’ve ever seen.”
The staff built the interior “from scratch,” and Boncore added, “It seems like everybody in West OC has stopped by to try to help out, and we want to give some of that back.”
Weekly specials will include “doggy happy hour,” which offers free food to dogs “with a human order,” and “low pay Mondays.”
“We just want to be a fun, local kind of thing,” Boncore said. “Joe is like, ‘Well, you’ve worked in all these top places,’ and I always tell him, ‘Yeah, but this is going to be the funnest place.”
